How to make non-sticky sabudana khichdi

Take 1 cup sabudana colander and rinse with running water. Make sure to rub the sabudana to remove excess starch

Soak the sabudana in water overnight. The water level can be 1 to 1.5 inches above the sabudana. Soaking time depends on the quality of sabudana

Pick up a soaked sabudana pearl and press it between your finger and thumb. It should mash easily

If it is still hard, then sprinkle some water and soak for 30 more minutes. Smash test again and drain any excess water

Roast ½ cup peanut in in a heavy-bottomed pan on low flame till it turn crunchy. Cool and coarsely grind it in mixer jar.

Add the peanut powder, 1 tsp sugar and ¾ tsp salt to the soaked sabudana, mix well. Keep aside

Heat 2 tbspn ghee in a heavy bottom non stick pan, ass 1 tsp cumin and few curry leaves, 1 inch ginger, 2 chilli, 1 potato (cubed)

Fry until the potato turn slightly golden brown, then sabudana peanut mixture and mix

Cook until the sabudana pearls turn translucent

Squeeze ½ lemon and add 2 tbsp coriander, mix well. Enjoy!
